This is a great recipe for egg lover and easily can be expand for large crowd of family or friends. The great thing about this breakfast frittata is that it only takes less than 30 minutes to prepare and plate. There is even the option of placing it into the oven while you prepare your breakfast beverage, how great is that. Now let’s get our utensils and start making this incredible breakfast frittata.
4 tbsp olive oil
1\2 onion sliced or diced
75g potatoes, peeled and diced
3 sausage, sliced equally
50g smoked bacon
2 cherry tomatoes, halved
Ground black pepper
Place crack eggs into a bowl, season with pepper and salt then whisk lightly
In medium frying pan add 3 tbsp of oil on a medium heat. As soon as the oil is hot add the potatoes and onion then reduce the heat while cooking them for 10 minutes, occasionally stir every few minutes.
After the potatoes and onions are cooked add them to the egg mixture and lightly stir.
Use the same frying pan on low heat with the reminder of oil, tip in the sausage and bacon and cook for 5 minutes. Add eggs after.
Cook for 10 minutes . Add the tomatoes 5 minutes before the eggs are set.
